Objectives

Make available to companies and public authorities :
Scientific and technical expertise, the fruit of work already initiated and exchanges between the teams of engineers, researchers and teachers working closely together.

Consumer panels spread out all over France (more than 20,000 child and adult consumers), groups of trained subjects, who are qualified for sensory description and specialised by type of food product.

Tools based on secure and anonymous databases (Sensobase, Prefbase).

Experience with sensory studies, covering more than a thousand tests every year.

Research programme
Optimising sensory analysis methods (number and profile of the tasters, how often consumers are solicited):

- Thesis was performed within the RMT: "The number of subjects in the sensory analysis panels: a database approach" (defended March 22, 2012 by Miss Mammasse).

- The work on methods of experimental economics will be presented to industrial in Rennes, Caen, Agen, Illkirsch, Bourg-en-Bresse and/or Paris from October 2012.
Better understanding of consumer preferences and their influence on food behaviour (Epipref research project).
Monitoring preferences over time (preference observatory), especially in liaison with the nutritional context and food offering.

Databases managed by the Research-Industry-Sensometry Interface laboratory (Liris) of the European Centre for Taste Sciences
Sensobase: automated tool for assessing the performance of trained subjects, which makes it possible to have reliable indicators that can be obtained quickly on the performance of trained subjects and groups.
Prefbase (currently being compiled): tool for calculating and monitoring product acceptability indicators, making it possible to position a product in its competitive environment in terms of acceptability.

Expertise
Involvement in formalising methods and standardisation (Actia guide to good practices, Afnor commissions).

Disseminating and sharing knowledge

The Actia guide to good practices "Sensory evaluation" is being updated.

Organising information days, publishing technical and scientific articles stemming from research work.
