Objectives

Food fraud is no longer a marginal issue: incidents recorded by the European Commission (JRC) rose from 28 in 2016 to over 600 in 2025, while analytical laboratories increasingly have to handle growing volumes of data from advanced spectroscopic, chromatographic and molecular techniques. Many researchers and professionals still lack structured training in processing and interpreting this data.

Foodtrack addresses this challenge by placing digitalisation at the core of a European training ecosystem, combining advanced analytical techniques, AI-driven chemometrics and digital traceability, around four concrete levers:

  • building a European skills framework on food authenticity, co-created with industry, regulators and academia;
  • developing a modular digital training platform (Foodtrack Academy), combining online modules, applied case studies and pilot training sessions;
  • organising blended mobility for students and researchers (6 mobilities of 60 days), as well as workshops, webinars and a food-fraud-detection hackathon;
  • designing a certification scheme, including micro-credentials, and a sustainability roadmap beyond EU funding.
